Season a 5 pound fryer with cajun seasoning and bake till done. Use half of the fryer for this recipe - I like to use a mixture of both white and dark meat for my salad but you may choose to use just the white meat. Run the meat through a meat grinder and follow it with a slice of bread to get all the meat out of the grinder. Next chop your boiled eggs very fine - a pastry blender works really well for this job. Mix all ingredients very well adjusting cajun seasoning to taste and mayonnaise for spreadability. 1/2 chicken will make enough salad to make sandwiches from 2 loaves of bread if spread thinly and crusts cut off or if you like it a little thicker on your sandwiches then it will only go for about a loaf and a half. I cut my sandwiches on the diagonals to make 4 small sandwiches. I also like to make some out of white bread and some out of wheat bread.
