King Cake Icing

Ingredients
4 Tablespoon Hot water 1 Teaspoon Almond extract
1 Pound box Powdered sugar 2 Teaspoon Pineapple extract

Directions

To make icing, sift powdered sugar in a bowl and add extracts and hot water beating until smooth. Icing should be just liquid enough to roll slowly down sides of cake. If too stiff add small amount of water. Spread icing on top of cake and let roll down sides. Sprinkle colored sugar on icing in 3" wide bands around cake alternating colors. The KING CAKE is made at Mardi Gras time and was at one time used to select the King and Queen and other royalty at the Mardi Gras balls. The significance of the pecan bring that the person who got the pecan in their piece would be King or Queen. Now days a plastic baby takes the place of the pecan (please don't bake the baby) and the person who gets the baby provides the next cake!
