Cajun Salsa

Ingredients
1 Tablespoon Salt 3 can Whole tomatos
4 Cup Onions, chopped 16 Ounce Tomato sauce
14 Cup White vinegar 1 Tablespoon Lemon juice
1 Tablespoon Chili powder 1 Cup Bell pepper, chopped
12 Cup fresh Cayenne peppers, chopped  

Directions

In a large saucepan put whole tomatos and their juice, squish them through your fingers until well squished. Add remaining ingredients and simmer uncovered over medium heat for 1 hour stirring occasionally. Pour into clean quart or pint jars and put lids on. Let cool and refrigerate. I consider this to be a medium hot salsa. If there aren't any fresh cayenne peppers in your area use any fresh hot pepper available.

Makes 2 quarts.
