4 cup Sugar |
1⁄2 cup Water |
6 cup ripe Figs, mashed |
2 large pkg Strawberry gelatin |
Put all ingredients in a large pot and bring to a boil over medium heat stirring constantly. Cook on low heat for about 1 hour or until thick. Pack into hot sterile jars and seal. Process in a boiling water bath for 15 minutes.
Here in south Louisiana we usually have a lot more figs than strawberries so we make this mock strawberry preserve so figs don't go to waste. The kids seem to like it too!
