2 medium Eggs |
dash of Salt |
1 tsp Margarine |
4 tsp grated Cheese |
2 tsp Evaporated milk |
1⁄4 tsp Tabasco sauce |
1 tsp Onions, chopped (optional) |
4 tsp cooked Meat, chopped (your choice) |
Mix all ingredients together except the meat and cheese. Mix well. In a small rounded bottom skillet over medium heat, melt margarine. Add mixture to hot skillet and swirl mixture up the sides of the pan. Swirl as you cook to build up sides and when eggs are almost set sprinkle meat and cheese on one half and fold the other half and cook until eggs are set. Serve topped with a teaspoon of Cajun salsa and buttered toast.
