Ingredients
2 medium Eggs dash of Salt
1 Teaspoon Margarine 4 Teaspoon grated Cheese
2 Teaspoon Evaporated milk 14 Teaspoon Tabasco sauce
1 Teaspoon Onions, chopped (optional) 4 Teaspoon cooked Meat, chopped (your choice)

Directions

Mix all ingredients together except the meat and cheese. Mix well. In a small rounded bottom skillet over medium heat, melt margarine. Add mixture to hot skillet and swirl mixture up the sides of the pan. Swirl as you cook to build up sides and when eggs are almost set sprinkle meat and cheese on one half and fold the other half and cook until eggs are set. Serve topped with a teaspoon of Cajun salsa and buttered toast.
