Fresh Green Beans with Potatoes

Ingredients
2 Cup Onions, chopped 1 toe Garlic (optional)
4 Cup Potatoes in 1" cubes 2 Teaspoon Cajun seasoning
2 Cup Salt meat in �" cubes 8 Cup fresh Green beans in 2" snaps

Directions

Put all ingredients except potatoes into a dutch oven and add enough water to cover vegetables. Cook on medium heat for 1 hour. Add potatoes, pushing them down into the green beans until they are covered by the juice; if there ins't enough juice to cover the potatoes add water to cover them. Cook covered until the potatoes are tender. Serve over hot rice. Fried or baked pork chops go real good with this dish.

Makes about 16 cups.
